Loaded Bakes Potato Bacon Soup couldn’t be easier than this. Some warm crusty bread and you have the perfect dinner meal.
Have you ever eaten a dish in a restaurant that was so amazing that you couldn’t get it out of your mind? That’s me and that’s this bowl of thick, creamy, cheesy Loaded Baked Potato Bacon Soup.
One of the main reasons that I am a huge soup fan of soup is, with the right ingredients and heartiness, your bowl can become a meal. So you are looking at a one pot deal here. Sure, you’ll want to add some warm crusty bread or homemade Buttery Biscuits (my grandma’s recipe), but it’s a simple way to serve up dinner.
When you think about this recipe, you have everything you would typically have in a complete meal, it’s even going to please the men (bacon, ham and potatoes). Yes, lots of bacon! Oh, and don’t forget the cheese! Seriously you cannot go wrong with this soup.
So here’s what you’ll need to make this recipe
- sour cream
- chicken broth
- shredded cheddar cheese
- chopped green onions
- salt and pepper
1. In 12-inch skillet, cook bacon over medium heat 6 to 7 minutes or until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons drippings in skillet. Cook onion in bacon drippings over medium-high heat 6 minutes or until almost tender.
2. In a large heavy pot (dutch oven), mix onion, broth and potatoes. Heat to boiling; reduce heat. Cook 10 minutes or until potatoes are very tender.
3. Meanwhile, in same skillet, melt butter over low heat. Stir in flour with whisk until smooth. Cook and stir 2 minutes. Gradually stir in 2 cups of the milk. Pour milk mixture into potato mixture. Add remaining 2 cups milk, the salt and pepper. Cook over medium heat, stirring constantly with whisk, until mixture is thickened and bubbly.
4. Stir in ham, half of the bacon, the sour cream, 2 cups of the cheese and 1/2 cup of the green onions. Cook until thoroughly heated and cheese is melted. Evenly top individual servings with remaining bacon, 1/2 cup cheese and 1/4 cup green onions.
