Fluffy Blueberry Pancakes

Fluffy, nutrient dense pancakes that are super easy to throw together.  Great for busy school mornings.

Ingredients

Instructions

  1. whisk together the dry ingredients in a medium bowl
  2. preheat non stick frying pan over med/high heat, lightly grease
  3. add in the milk and eggs, mix well
  4. gently fold in the chia seeds and blueberries
  5. pour 1/4 cup of batter into heated pan
  6. cook in a preheated non stick frying pan
  7. cook for about 2 minutes or until you see bubbles, flip
  8. continue to cook another minute or until golden brown
  9. serve with fruit, nut butter or Maple syrup
